Headed by José Monje and his son Pedro, with chef Sergio Humada working the kitchen, Via Veneto serves distinctive and familiar flavours prepared with avant-garde flair. This approach yields the likes of tagliolini with slow-cooked Calaf eggs and Graus black truffle confit; citrus-infused pilpil-style cod confit with periwinkles; and roast duck in its own à la presse juice.
