The name Hoja Santa has its roots in a trip Albert Adrià and Paco Méndez took to Oaxaca, Mexico. The restaurant expresses their love for the country in a gastronomic tour de force inspired by the flavours and traditions of Mexico.
By coming into contact with other cultures and its vast and climatically diverse geography, Mexico has developed a richly varied cuisine full of contrasts. Hoja Santa offers a freely inspired and modern take on traditional Mexican food, inviting us to explore the country's many regions and their best recipes. Ingredients reign supreme in every dish, beautifully enhanced by a variety of sauces, which are essential to achieving the characteristic flavours of Mexico.
We return from this evocative, authentic gastronomic voyage through Mexico with memories of black garlic mole with avocado, shrimp with macadamia and cashew mole, and black chichilo with sirloin steak. All served in a picturesque setting on a calm pedestrianized street a few minutes from Montjuïc and Plaça Espanya.
