At Etapes, chef Pol Montés gives the richly diverse gastronomy of the Mediterranean its most modern and aesthetic voice. The menu reflects a decisive effort to bring back long-neglected flavours and aromas of traditional Mediterranean cooking. Good examples include roast meat cannelloni with truffled béchamel sauce, lobster with white truffle cuttlefish-ink linguine, and suckling pig with peaches, pearl onions and artichoke purée.
The wine list is an equally important element in the restaurant's gastronomic concept. Etapes boasts over four hundred different wines with a particular emphasis on indigenous grapes and limited productions of locally produced wines made from revived varieties.
