In explaining the philosophy behind Espai Kru, chef Ever Cubilla goes back to prehistoric times. The first part of the menu evokes a time before the discovery of fire. Only raw ingredients. Here we find sashimi, carpaccio and tartare. Marinades, ceviches, salted meat and fish emphasize the quality of the product, turning it into an authentic gourmet delicacy. Among the chef's recommendations are oysters in ponzu sauce with salmon eggs, toro carpaccio seasoned with apple and ginger dressing, and the tiradito—thinly sliced red mullet with mango-laced “tiger's milk”.
Fire appears on the scene in the second half of the menu, adding a touch of heat to a surprising selection of dishes.
