Here creative cuisine reaches its highest expression, served in a quiet setting so that guests can truly experience the sensations conveyed in every dish through flavours and plating that reflect a meticulously precise aesthetic.
Àlvar starts out from a basis of traditional Catalan cuisine with French influences, but then allows his imagination free rein. Everything and anything seems possible. With an emphasis on the dish's ingredients and concept, he comes up with fascinating ideas, including an unusual surf and turf, foie and beef terrine with pickled onions or hazelnuts and yoghurt with wild berries.
